Sunday Pinterest Pancakes 

Weekends can take many forms, but a Sunday morning is always better when you start with a lovely breakfast. Pancakes go down well in our house and they are so quick and easy to make. I always replace the flour in any pancake recipe with gluten free flour as my children are both coeliac.

I’m a big fan of Pinterest. I could spend a whole day drifting through totally random collections of images. I find inspiration for my makes,  ideas of things to do with the kids. I’m pretty sure I could plan 20 weddings, redecorate a thousand houses and book enough beach holidays to last a lifetime.

I hardly ever look in a cookery book now. I find tons of new recipes on Pinterest and it’s easy to store them on my tasty stuff board. This weekend we’ve been trying out some pancakes from a Japanese hot cakes recipe I pinned. I love this recipe as it makes beautifully fluffy light pancakes. They are lovely made just as the recipe shows, but I was in the mood to mi things up with some variations. First version – Nutella filled pancakes.

Start with a spoonful of the batter in a hot and lightly oiled pan. Add a blob of chocolate spread and carefully top with a bit more batter. Once they are golden brown underneath carefully flip them over. They are fairly high so best cooked on a low heat so they cook through to the middle without burning. A bit fiddly to do but they turned out to be worth it. They rose really high and the Nutella was beautifully melted in the middle, we loved them!

Next version? This time I substituted a spoonful of the flour for cocoa powder to make chocolate pancakes. I used a smaller amount of batter and they didn’t therefore rise as much as the Nutella ones. I served them with blueberries and sliced bananas to add a slight touch of health. These would be lovely served warm with vanilla ice cream and berries, but I wasn’t sure I wanted my children to learn that ice cream for breakfast was an option!

Sunday morning breakfast success! Making pancakes is a really quick way to feel like you have had a something a bit more exciting that your usual weekday toast or cereal.
